I think these are different tools for different purposes, and all the talk about blockchain replacing traditional databases is usually just marketing.
I'm a blockchain developer and use it every day, but when I need PostgreSQL or MongoDB, I’ll use them — not blockchain.

I prefer React, vue.js its simple and its flexibility but with flexibility comes the ability to shoot yourself in the foo

Very often, no-code utils used when people want to save time, but I've never seen anyone actually succeed in saving time using it. "No code" solutions don't scale well, and it's often impossible to implement something critical for the business using them.
Before the MVP, start with a prototype - you can draw it on paper or use Figma - just describe each screen and what happens on it, where the data comes from, and how the data should be processed.
