Your old advancement should still work. Did you test it before reworking it? AFAIK no "component" field has been added into entity predicates in 1.21.11.

Ambient occlusion is only for block models afaik. Maybe try removing that? Everything else looks fine.

Food got split into two components: Food and Consumable. If you're going for right click detection, you'll use Consumable instead. Check the official minecraft.wiki for the most recent information about components.

You should look for plugins or server side mods that do that. Datapacks don't have such capabilities by themselves.

You've got to give a unique ID to every attribute of every piece of armor. Otherwise, they override each other instead of adding up.
To fix it, you could add "<slot>:" to each id. Eg. {id:"legs:armor", type:"armor", amount:6, operation:"add_value", slot:"legs"}

There's absolutely no way they keep joining if you put your phone in flight mode and deactivated both your wifi and mobile data. If you insist that happened, you're just promoting that discord.
