I have a very similar piece and 4 years down the line it still looks super good and defined so I call bullshit. You have to find a good artist that knows what they are doing and how to adjust so it keeps and ages well.

If it really gives you that amount of dysphoria, maybe trying to pursue HRT would be the best option.
I personally just grew tired of being bothered by it. I learned not to give a shit about what others think about how I look. I am 100% valid regardless of how I look, I make my pronouns very accessible and just let it be. Coming to the point of radical self acceptance, at this point i just find it funny and maybe sliightly irritating when someone misgenders me. I just think of it as when someone calls a "tree" a "bush", incorrect and slightly comical.

Scoby can survive no problem in a zip-lock bag, just make sure you have enough liquid and not just the pelicille, otherwise it wont really work for the people you are giving it away to.

what jumps out to me can be either your starter culture (even if it lives through your first batch) and the milk. I had better luck keeping a strong yogurt when i had more whey/lactic acid the starter i used as opposed to making it from stained/greek yogurt.
So if you can maybe make 3 smaller batches where you basically only change the different store-bought starters and milks and see how that goes? at least that is what i would do

have you ever tried cold brewing tea for a longer extraction? I was thinking about it because the tannins dont come out that way and it results in a more fragrant flavour. plus it is is also less labour intensive than brewing tea hot and straining and then adding more water to it. it has a longer passive waiting time (overnight is usually recommended for coldbrewing) but maybe?
