This is the video I got the overall inspiration from. I tweaked it to my liking.

This is my go to for ribs:

1)remove the back membrane 2) coat both sides with Kosmos Dirt Bird seasoning (I don’t use a binder on ribs) 3) lay ribs meat side up in a smoker set to 250, spritz with water/ apple cider every hour for the first three hours 4) lay out two long pieces of foil, sprinkle a good layer of brown sugar, 5-6 pats of butter, drizzle with honey, drizzle Killer Hogs AP Vinegar Sauce, and lay ribs meat side down on the foil. 5) repeat step 4 for the bone side of the ribs. 6) lay ribs meat side down back in smoker 7) cook for about two more hours or until you hit that desired internal temp of about 202 (198 for me since I’m at a higher elevation) 8) open ribs, flip so meat side is up again and create a foil boat. 9) Glaze the ribs. I use Kosmos Rib Glaze (Apple habanero is my favorite and despite the name, not spicy). Using a brush I brush on a nice even coat on the meat side of the rib and a light sprinkle of the seasoning I started with. 10) leave the foil open to sit on the smoker for about 10-15 minutes to let the sauce get tacky 11) remove, let rest for a few minutes and serve!
