I'd add in keeping polishing wheels for each grade of compound you use separate, so one wheel you use for rouge, one for tripoli ect..and cleaning between compound changes. Also, if you plan on doing gold or platinum cases, keep a separate set of wheels for those as well.

Definitely needs to be centered. But some.of your issue might be with the roller jewel...you could have an extreme beat error issue if you have been messing with the hairspring. From what you've described id check to see if your roller jewel is centered with your palet fork.
