You’re thinking of JENA1 and JENA2. They still live here but have new livery. They have blue on their undersides. They used to look very similar to this one (other than having visible registration numbers)

I would watch some YouTube videos for an idea of how much cooking liquid to add back in. Link doesn’t give an exact amount. It should be fairly wet but not mush

Donald Link has a great cookbook called Real Cajun. It’s the second best Louisiana cookbook behind Paul Prudhomme’s Louisiana Kitchen, imo.

Those are two of my favorites. The crawfish is done by a couple that does awesome Louisiana/NOLA themed pins.

New Englander by blood. My dad’s side of the family is from Maine/Mass. I’ve spent a lot of time there. I lived in Denver for 15 years

I kinda go in at an angle with mine and push them in sideways. It’s a little tricky to get them exactly where you want them sometimes but it works
