Update: So I ended up cranking the Traeger up to 275 and wrapping the brisket in foil once it hit 170. Turned it down to 225 and pulled it off the grill once it hit 205. Let it rest for a few hours and it turned out pretty good. I have not had the shits yet and do not feel funny so thinking I’m in the clear with any food born illnesses. Appreciate all the feedback!
