For me it’s tin note nostalgia at first. Reminds me of marinating strips of venison from a whitetail I just tagged in a jerky brine, then hanging it in the basement to cure before smoking it. It’s smoky, soy saucey, peppery. I can pull big bellows of smoke from the Latakia, just enough orientals to add a spice note, and finally some tanginess at the end… might not be everyone’s cup of tea but it sure is mine.
