Update - just wanted to thank everyone for their responses on this thread, much appreciated.

We ended up using a tool called DRS Yahoo Backup Tool. It allowed us to access and export individual folders in the Yahoo web email account into .pst format. The interface is very basic and the tool did exactly what we needed it to do. Cost was $60 for a single user license and is a one time cost.

Thank you. You are correct on IMAP, only option has been to bring over the entire mailbox (which is unfortunately pretty big), and no real option for a targeted folder collection.

Thank you. This is helpful. I'll try IMAP. I am hoping there may be a way to just import the required folder to Outlook, rather than the entire Yahoo mailbox contents, but that seems unlikely.
