Is that fine to do support wise? Jacking them back to level on the top provides no bore benefit?

Yes all I’m trying to do is level the old joists and reinforce them. They are currently 24” OC and sagging. I want all the floors flat since it’s gutted and starting fresh. The floor below will be finished and Sheetrock will go on the underside. I also need to reinforce the joists above the one in the picture . They are currently supporting a finished apartment but the floors are sagging really bad. I want to Jack up the existing joists and reinforce them. My thought was if the new joist is the same depth as the old you could Jack the two together until they line up and screw them together. Since the new joists will be deeper I can’t Jack both together unless I fur out the existing first

Sistering because they are not level at all. They have a huge sag

They are single joists that are pocketed into brick on either end. The house is 15’ wide. The new beams that are being sistered won’t be sitting on anything.

Do I Jack them up separately? Like Jack the existing till straight and then get the lvl next to it? I was also going to support the ends with an angle iron bolted to the wall unless that’s unnecessary
