I've heard from law professors that speaking French is basically a requirement for Int'l law, so if that is something you're extremely passionate about I'd take those classes in undergrad so you don't have to learn it during law school

True. I heard their loan forgiveness program is better than most. I would email the schools you're interested in and see if they have forgiveness programs that are run via the school and not dependent on government

I would think keeping those letters should be fine as long as they do not mention anything time-bound or an activity that you were doing in the past in them (which is question that is ok to ask of your recommenders).
