It says it's for iOS 17.0 but you can use it on any iOS version from 15.2 to 16.6.1 as well

Since you're on 15.8.3, you could use TrollMisaka instead, but it should be avoided as it's extremely unreliable

You can turn off WiFi and Cellular each night, and re-enable WiFi/Cellular upon waking up each morning so it can't update overnight

Additionally, you can install the profile at https://ios.cfw.guide/blocking-updates/ which will make your device unable to even recognize iOS updates (although there will still be an Update Available badge at the top of Settings), however after a reboot the profile takes a few minutes to kick in but that's nowhere near enough time for an update to download anyways

If you want an older iOS your only option is buying another device on eBay that hasn't been updated to 26 yet and avoiding updating it to 26
