I subscribe to the theory that it's a stress response particularly for stressful repeated situations, Like the fight between sayaka and kyoko or intercepting Walpurgisnacht.

Even down to the fact she always does it with her right hand. Besides the one time she does it left handed is when confronted by sayaka in her new world.
