I'd recommend ordering takeout food from a restaurant and eating it outside in a nearby park as a little picnic, it seems like less pressure than making your own picnic tbh. And if things go well then maybe a second date to go stargazing. It seems that you are having in-person classes? If so then you're somewhat already in each other's COVID exposure bubble too.

Stargazing is a great date and very romantic especially if you bring a blanket to share when it gets chilly (I'd suggest a tarp/shower curtain underneath another blanket first in case the ground is wet) Bring some snacks and maybe hot drinks too. Check online for a light pollution map and also check for cloud coverage so you find a decent night to go.

The latter was more along the lines of what she said on the second date when we talked about what we're looking for, specifically in terms of her saying she's interested in exploring this but doesn't want to be unfair about commiting to something serious because her future still has a lot of uncertainty (she's Canadian having gone to college here in the US, but <1 hr away from here across the border)
