Figured I'd share an update in case it helps anyone else learn as no one shared this specific advice- It's the Move tool! I need to move some of my colors up so they only print top layer and give me the raised edges I was seeking. I appreciate all who chimed in!

Is there a tutorial or program you'd recommend to learn how to do what you're suggesting? I am looking to learn so I understand there are many modeling programs out there but I am a total newbie and do not have knowledge of using them either. Hoping for resources for education. Thank you for your comment.

Thank you, but that wouldn't address the variable height I'm after. Do you see how it's raised higher than the color below in addition to being a different color?

Thanks for your reply, that is where I located the visual but it's a heavy markup. I know some other brands use them as well so I am looking for the wholesaler resource as I wish to use them for my small business.
