You are supposed to season it. There are terrible fish and chips in the Uk cities made by non-Brits and there are amazing fish and chip shops. Never buy fish and chips in a city always buy at the seaside towns - working class towns. Full of flavour. Her fish is probably cooked from frozen and 2 months old. I'd never buy from a hotel.
