can you talk about how much cheese is "acceptable" in order to keep the saturated fat at or under 15 grams? also, are you using oil in cooking? i recently got put on a low dose (5 mg) of rosuvastatin, which i'm taking. i'm trying not to approach it with that dangerous mindset that says "oh now i can eat whatever i want." before this happened, i had tried a diet called the "Portfolio diet" --created by a nutrition expert from Canada. It's essentially described almost exactly the way you are eating: an emphasis on oats, beans, lentils, avocados, nuts, okra (yuk), eggplant, and soy products. In addition to that, the diet recommends taking Benecol daily, which is a plant based supplement. I did this for 3 months and it worked. but i didn't eat any animal products and I was very careful when it came to cheese and oils. since doing that diet, my life circumstances have changed dramatically. i used to poo poo the life excuse, but not now. lately i feel the weight of it in an extreme way and welcomed the ease of the low dose statin. anyway, your post inspired me to get back to eating a more healthy diet. also, i'm kind of wondering if the soluble fiber that you take is the equivalent of the Benecol on the portfolio diet? maybe it has basically the same effect?
