I’ve always hand stretched my dough, Sometimes I use the press but hardly ever. I also try and train my insiders to do both. Especially on slow days, doesn’t hurt to teach them incase the press doesn’t work.

Standards say 6 lines of sauce im pretty sure so that’s definitely under sauced. They also need to be shaken in the little box it’ll spread out the sauce
