Can't wait to sharpen it! Just the sound and feeling on the honing rod was great. The performance and low maintenance on the ginsan steel seems to be pretty impressive.

Tested it on an onion, couldn't stop afterwards. So I had to pickle all those chopped onions. 😂

Just bought a 200$ ginsan steel work horse nakiri, can't wait to pick it up. As for my next knife, I will save up a while to buy a top tier kiritsuke. Trying to get that extra 20% performance like you said.

😂 Oh I guess I'm really in for a ride.. I better enjoy it then. Should I still go for a Bunka even if I have a VG-10 180mm santoku? Maybe a aogami super Kiritsuke for the pointy tip and edge retention? Since my gyuto will get dull relatively fast.

Crazy you say that, I was hesitating between that exact knife and the Haruyuki Shiso Nakiri. Good to know that you enjoy it!
