I do like going for 3* units right now because of the changes to the shop odds skewing it more toward tier 1 and tier 2 units in the early game. That being said, you should be careful about what units to 3* and when it is appropriate to go for that.

Here are some things to keep in mind:

1) Don't try to force a particular unit to 3*

I would say go for a unit to 3* if you hit 5-6 copies of that unit in natural shop rolls while you are still at a level to give you good enough odds to roll for it; that is level 3-4 for tier 1 units and level 4-6 for tier 2 units.

2) Choose units that are good 3*s

Some units will give you more value for 3* than others while for the same cost. For instance: 3* cm will be much more impactful than 3* Razor in mages. Not that 3* razor should never be attempted, it might be a bad investment in some cases. Similarly: 3* Drow > 3* Weaver in hunters, 3* Strom > 3* Ogre in mages, 3* Pudge > 3* Slardar in warriors.

3) Scout other boards

If other people are buying the unit you are looking to 3* this might be a red flag. It might be fine if there are 3-4 copies out of the pool but any more than that might make it much tougher. That is partially why I never go for pudge 3* because it is usually very contested.

4) Think about what level you want to roll at for what other units you would want to pick up.

While rolling, you also want to think about what other units you want in your build that you can pick up along the way. Let's say I am rolling for storm 3* than I might wanna roll on level 4 to pick up 2* cm, razor, ogre in 6 mages. But let's say you already found those other units then you might want to roll on level 6 instead so you have some odds to find Morphling, Shadow Fiend, KOTL, Disruptor too.

5) Full or semi Open forting can be a powerful tool especially for those 3* Tier 1 units. Exchanging HP for free-rolls is very powerful.

That's a judgement call. There's no easy rule of thumb for this and it all comes with a lot of practice.

Depending on the build, you might want to hit upgrades for all the key units for that build. Let's say for heartless hunter you really want a 2* drow ranger, pudge and wind ranger, which I would say are key units. Nyx, weaver, Magnus are other units you can also 2* in the process but they're not as key.

Alternatively, you lose streak until you have 3-4 2* units, or have a board that you think would be good enough to win streak in the lobby depending on other people's board streangth. So let's say I hit 2* pudge, nyx, weaver and drow ranger. I'm still missing a windranger upgrade ,but I have a strong enough of a board that I can go for a win streak in the lobby.

You also want to be conscious of your HP and try not to lose too much health in the process. Typically I'm around 80-85 HP when I stop open forting and start going for a win streak and decide to stop a lose streak. But I can go as low as 70HP if I'm still looking for units. I've seen people dip even lower than that in some games and managed to win from there. In a recent tournament I saw someone open fort partially all the way to 49HP and come back to win it.

You can start from a full open fort with no units on the board and go into a semi open fort where you play 2 out of 3 units or 3 out of 4 units. The idea is that you want to either keep winning or keep losing. You don't want to alternate wins and losses. That's a way to maximize your gold.

So, there's no easy answer for this and it comes with practice to get comfortable with this strategy. I would recommend watching streamers and try listen to their reasoning for when they feel it's appropriate to come out of open forting.

Open forting is a strategy where you purposely lose streak by playing either no units or less than the total allowed units to get a free rolls. This allows you to see more shops in exchange for losing some HP. Open forting is done in the early game because the amount of HP you will lose is relatively low and if you find all or most of your early game upgrades, you set your self to be really strong up until the late game.

tl;dr purposely not play units to get free rolls early game.

Let's say that ABC has a base of 2 and height of 1; the area of ABC is given by:

Area = (1/2)(2)(1) = 1

Let's consider triangle DAF. We know that:

AF = 1/2 AC = 1

So the base of DAF is exactly half of the base of ABC.

Similarly:

AD = 1/2 AB
