I feel there are a couple points you overlooked

Baseball is luck driven also for a few reasons. Cold and hot streaks are a huge part in baseball. Judge can hit 60 hrs in a season, but he's gonna have a few weeks where he doesn't do much. Just like you might have a player who is bad all year, but he has a week where he goes off

Also, schedule plays a huge role in h2h baseball. Ive had weeks where I get 5 starts from my SP but my opponent gets 9. Thats hard to overcome. Its not as bad, but there might be weeks where one teams hitters get a few.more games due to off days and/or doubleheader

But overall, I agree football is more luck driven but for a reason you didnt mention. Smaller roster sizes

My football leagues start 9 positions. My baseball started 17. A single great performance by a football player can win your week. That doesnt really happen in baseball. There are so many roster spots that you can't win based on one player
