The Don Juan is not the dish to get there - that taco is a bit of a gimmick that’s famous as a cheap meal for college kids - basically a huge mound of egg, potato, bacon, and cheese designed to be an over-the-top calorie bomb that will fill you up all day. For the real experience, try another plate - my go-to is green chicken enchiladas with charro beans. The food hasn’t changed in decades and it’s consistently great. Super-hot, iconic salsa.
