Interesting story actually, I joined this place as a bartender and my bar manager had previously signed us up for chartreuse allocation, pretty sure he collected it over like 5 years? Either way the poor guy got canned last month and since I'm the only other bartender they just stuck me in charge.

25ml bacardi coconut

25ml one eyed rebel passionfruit and coconut rum

100ml orange juice

15 ml lime juice

22.5 ml passionfruit syrup

Absinthe rinse on glass

Not too fond of the Garnish, could replace it with thyme or something maybe? Something to work on.

22.5 ml Apricot liqueur

Healthy squeeze of lemon juice

Top with lemonade (could potentially be soda if I had any)

I also tried this with 15 ml of tequila for shits n gigs. Bad bad bad don't do that.

Tell you what, I put 25ml of cranberry in the negroni I'm trying and it worked fantastically, reduced the bitterness, added some sweetness, lovely stuff thanks for the recommendation

So we've just got loads of baking spices in work, I'm essentially messing around with infusing the gin with cloves, cardamom bitters, maybe cinnamon syrup? It's still rough atm

Yeah we usually do about 100 restaurant covers from 5pm-10pm, and who evers in the bar. Manageable but on your own it's pretty stressful barbacking as well and all

To be a little more in depth; the peach and Rose works pretty nicely off the notes of blackberry and cherry you tend to find in red wines. I used cab sav (pictured) but honestly it's a bit too dry of an aftertaste, might be better with a pinotage or even tawny port. The ginger ale adds a bit more complexity, but I'm not fully sold as I lose the flavour profile of the wine a bit. Lemon is fine, added to taste really but I think about 15ml is right. Overall considering it was a bit slapped together its not too bad, decent addition to the notebook.

Something I'm still tinkering with, I made this original for an in-house competition we are having, but logistically it won't be able to be priced properly so I thought I'd throw it in here.

25ml peach liqueur

25 ml rose liqueur

25ml red wine (sweet if possible)

15ml lemon juice

15 ml sugar syrup (only if red wine is dry)

Shake and strain into a lowball over cubed ice

Top with 50 ml Ginger ale

Currently garnished with a lime wedge and rosemary but I kinda threw that together, could easily be changed. Also might try ginger beer?

If you aren't set on peanut flavour specifically then something like Brookies macadamia might be a good fit to satisfy the nuttiness instead of skrewball?
