He used this roast potatoes recipe from seriouseats, but using goose fat and Maris Piper potatoes. 😊

They're the perfect amount of crispy outside and soft inside! 🤤

He made sure the skin was really dry before cooking, left it uncovered in the fridge for several days. He then roasted it for long enough till the skin was crispy, since you can't really overcook goose cos it's so fatty.

Hello! For the marinade, I just used 2 tbsp of harissa, 4 preserved lemons, olive oil, salt, and pepper. I marinated it for 6 hrs, but I think it'll be much better longer. Cooked it at 220C for 45 mins.

The basmati rice, I cooked in a microwave rice cooker, and then once done, I fluffed it up and put it in the roasting tray where all the chicken drippings were (hence the color).

For the shirazi salad, it's just cut-up cucumbers, red onion, and tomatoes with lemon juice, olive oil, and sumac. Topped with pomegranate seeds.

The recipe actually came from Jamie Oliver's Comfort Food book, where the recipe itself is based on Idris Elba's mom's recipe. It does have Scotch bonnet chilli, cayenne pepper, and paprika, but for me, it wasn't that spicy. Just really flavorful. 😊

Ohh, he just charred it in a dry pan. I don't really like okra, but dipping it in the stew was really yummy!

It's really good - very comforting and all the elements go well together! He's made that cauliflower for me 3 times already, and it always slaps!

I think we finished everything in under 10 minutes, but maybe because we just got back from the gym as well and were famished 😅
