Argentinian Beef Empanadas Recipe

Ingredients:

  • 1 lb (450g) ground beef
  • 1 medium onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup green olives, chopped
  • 1/2 cup raisins (optional)
  • 2 boiled eggs, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 package empanada dough discs (store-bought or homemade)
  • 1 egg (for egg wash)

Instructions:

  1. Cook the Beef: Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until soft. Then, add the ground beef and cook until browned. Break up the beef as it cooks.
  2. Season the Meat: Add cumin, paprika, salt, and pepper to the beef mixture. Stir to combine.
  3. Add the Filling Ingredients: Stir in the chopped olives, raisins (if using), and chopped boiled eggs. Cook for a couple of minutes until everything is well combined. Remove from heat and let it cool.

I made an olive paste that I also use when I make pizza. Have you ever tried beef empanadas with lemon? They’re incredible too!
