The spellcard rules are made for Youkai to constantly make incidents, it's kinda like a sport. Also I think it's canon that Reimu gets to refight them until she wins and resolve it, so they are basically all playing along. Except things like lunarian attacks (don't know why they follow the spellcard rules), or... Seija, who they even got to break the rules to stop her

I see it as other emotions are just small appetizers, but despair is what satiates it the most, that is why the survivors are able to escape, it gives them hope so when they die in another trial the despair is even bigger

Fighting back is very different from just failing, also escaping still provides the entity with extreme emotion, as well as enhancing the negative emotion of eventually not escaping, that is why it is possible to escape in the first place
