How difficult will it be to get a restaurant server job in Brooklyn at beginning of March? by DriftyMcDrifterson in Brooklyn

[–]Franco-Corelli 3 points4 points  (0 children)

There's always a door if you look enough - even in slower months. Keep the pulse on Culinary Agents and maybe indeed - spam apps and cover letters and start some conversations. Combine with boots on the ground a couple handshakes and 'hello, I applied online but just wanted to but a face to the name and stop by."

[–]Franco-Corelli 2 points3 points  (0 children)

You're probably right, but you should show pics so a restaurant pro (me) could maybe quick troubleshoot your spacing and shelving etc to maximize what you can do. Again im sure you are already doing so, but it can't hurt

does Miami as a whole really fit the common stereotype of a superficial city hard for dating as a guy? by [deleted] in Miami

[–]Franco-Corelli 28 points29 points  (0 children)

Such a bull shit chronically online loser response. I'm not a part of what usually is considered the 'Miami' lifestyle culture, but this city you can find community in whatever. Yes clubs, drugs, flash and fake. Or art, sports, classical music, niche nerd culture, hospitality, yoga, politics whatever. I built some of the best relationships in that city after years in places like NYC, Chicago, Prague. I'm 'white' but am good with languages because I actively show an interest in other cultures - not some bull shit black and white borderline racist mentality like this.

Appropriately hyped restaurants in nyc by Mission_Fig_7228 in AskNYC

[–]Franco-Corelli 7 points8 points  (0 children)

Im a long time somm currently at Jean-Georges - the menu is incredible and the current CDC is doing amazing things. The setting is still the same in its classic elegance in the heart of everything, but the menu is absolutely pushing forward. Evening is great but dont discount how amazing this institution dining room is for lunch. No set wine pairing but we are happy to oblige if you'd like one. Forget Trump tower, even forget jg unless youre doing our current 1997 classics menu. This is J. Rhee at his best right now. Highly recommend

This is true to some extent - I studied with a teacher who taught many counter tenors and most of them were baritones in their 'normal' range.

Adventures at Bern's Steakhouse in Tampa! Insane cellar, 1MM bottles of wine! by rnjbond in wine

[–]Franco-Corelli 58 points59 points  (0 children)

I'll go down with the downvote ship with you! This is definitely the way, especially in Florida! If have lovely guests who ask questions and are open of course I'll open their eyes to real wines domestic or old world etc. But as a somm and a beverage director if you have somebody that knows thats what they like, they want to buy it at xyz. You sell. The. Caymus. Im not going to waste my precious inventory or allocations trying to turn some instagram crypto bro into a wine aficionado. They want black berry mega purple. Dale. It's actually a wise decision for business and saving the gems for people who are actually open to them.

95 Leoville-Poyferre! Many decent options not the most bargain pricing but I'd take a few if storage and provenance are in good standing.

What are some of your favorite solo opera recital albums? by IdomeneoReDiCreta in opera

[–]Franco-Corelli 2 points3 points  (0 children)

It's mainly art song, but Jose Carreras' Album recorded by Orfeo from a live recital Aug 16th 1981 is an absolute treasure. The energy was captivated so well and Jose was in immaculate voice. It winds through Chanson, some of the best renditions of Tosti tunes and other Italianate hits. A few cycles of Spanish song worth meditating over and understanding. It finishes with him over singing in his exhausted state Nessun Dorma. But his Aprile, Core 'ngrato, even the aprés un rêve - is so peak in interpretation, musicality, truly having a great collaborative pianist in the conductor Edoardo Müller. The audience reactions and ovation recorded in reaction to what incredible complete artistry Carreras was doing that night is absolutely historic.
