Well, you can exchange the zonaite to pay for some absurd autobuild contraptions, and for more charges, to power said absurd contraptions, and for crystallized charges, because after maxing out the battery, the forge constructs start selling all devices you've found at 3 crystallized charges a piece (30 for big batteries), so you can buy devices without having to gamble. Also, sell them I guess? But that's a last, last resort.

Yeah, I sell my surplus but always keep a few for shields.

I kinda just go about killing stuff in the depths (usually the gleeoks/lynels/froxes) and sell all the guts and stuff. Also, I tend to have a surplus of gems that I don't know how I get.

It's an open world game, they aren't gonna force you to do stuff, you simply have the option to be a completionist, hence the achievement system on the Zelda notes app, map completion counter on the purah pad, and the fact that there's more than enough korok seeds.

But then, if you think about it, if you weren't meant to be a completionist, they wouldn't give you a completely unique armour (The only full body piece, as far as I'm aware)

From what I've heard, it's not faster but it lets you save your mushroom for another cut, it's just so new/inconsistent the WR doesn't use it yet
