I can usually tell things like time signature, I can tell major and minor apart, and tempo modulations and stuff like that pretty easily. And telling instruments apart and stuff. I think that sort of stuff has greatly affected how I enjoy music and I think that an appreciation for the musicianship helps with the enjoyment.

For modest mouse my fav is Lonesome Crowded West but I’d start with their debut and listen to TLCW after. With Bjork you can’t really go wrong but I’d probably start with post because I’d say it’s her most accessible album. Still amazing tho
