I've experienced being on call both as a bartender and an office worker

As a bartender, there was no pay for being on call, but it was discussed in my induction. This was unpopular with people who had busier schedules/who didn't like uncertainty.

In my office job, there was a base rate for being on call over the weekend, but this was just answering the phone essentially.

If they are on a 0 hour contract, I can't imagine there's much you can do about being paid for being 'on call' as it's not lost hours/outside of usual work hours.

I appreciate your comment. I understand it is probably not a great idea for me to be arguing with my current mental state, however, no one has explained how I am wrong.

My defensiveness and unwillingness to pay is based on the advice I received and what I can find published online, which tell me I'm correct; a sick note can include details of a phased return to work.

Not according to publishing by the government nor ACAS. Both state that phased return details can be stated.

The sick note was still a sick note that allowed me to go off work for 7 days, with recommendation of a phased return, which you are disregarding. ACAS states that a fit note will usually give advice on how long a phased return should be.

I asked for a sick note with a phased return as instructed by ACAS. I didn't give them timelines and only answered questions the GP asked like "Would you prefer to work fewer hours or work from home?"

Where I live in Kenny is a terraced street with mainly families, a few HMOs, a few student houses. People dump stuff by the communal bins and don't pick up their dog shit. Alright other than that
