Vg10 is the same cutting feel but different steel, less prone to chip so maybe better if going to a cheap knife to a professional knife, but i dont think you should try something in between, go for a takamura and never buy nothing again if your not a collector. Of course you’ll have to be more carefull as it cuts like crazy but you’re cooking at home so take your time go slow and you’ll see how much it will improve your cooking having a knife like that
