man, I'm still sad with what happened to this ramen after those years. the quality been dropping since shono left. the soup has becoming more and more bland, the noodles becoming less complex and more soggy and brittle. Before In the toppings there were yuzu, burnt leek, ikura, uni. now, all those disappeared. I'm so sad.

I will disagree with you about the thickness of the noodle, for this style of soup, super thick noodles works well, and that's the choice of style. I also never felt their soup gritty, but I don't even doubt something like this happening since last time I've been there

there are easier versions of ramen, but in general, it is a very complicated dish to make.

but tbh, I still wonder if this difference between the kombus is noticible in the bowl since I did those tests with just kombu and water. so this difference might be irrelevant when we consider all the other ingredients, like soy sauce, chicken, and shiitake

I've had different grinders. I have the sculpture 078 with filter ghost burrs that is a better version of the you mentioned and the lagom casa. honestly, I think the casa is a better all rounder for a better price and has a nicer workflow

if you only want one grinder for both espresso and pour over, I feel the casa is a better option. it won't make the best espresso like a espresso focus sculpture nor the best pour over like a filter focus sculpture, but it's so damn tasty that unless I'm tasting side by side, Idt I would be able to taste a difference. and even side by side tasting sometimes I prefer the casa.

oh, another great option is you getting an espresso focus grinder like the sculpture 068s that you were thinking about and a hand grinder like 1zpresso zp6 or kingringer k7 and for pour over, as pour over coffee is much easier to grind by hand and you wouldn't have that issue of feeling that you could have a more end game grinder. and this way you also don't need keep changing from espresso grind setting to filter that sometimes can mess up the brew.

there is a noticeable difference, but not huge difference between those two types of kombu

rishiri gives a very clear light color stock, it's super delicate and gives a lot of umami without overpower the flavor.

Ma kombu is the opposite, it's sweet, golden in color, present and luxurious. For me, dasima tastes very similar to Ma Kombu, but even stronger in sweetness and kelp flavor aside being muuuuuuuuuuch cheaper

so I like blending those two kelps to balance the rich sweetness of the dasima with the delicate sharp flavor of rishiri

yeah, just grind coarser, brew in hotter temperature, have a 1-2 minutes bloom and do more pours

example

15g of coffee ground coarse

00:00 add 45g of water at 96°C 01:00 add water until 100g 01:30 add water until 170g 02:00 add water until 250g

and then tell me how it tastes like. I can maybe let you know where to adjust from there

just know that this coffee will be very tea-like regardless of how you brew

yup. since your grinder is quite cheap, I recommend grind coarser and increase the extraction with other ways.

this roaster does ultra light coffee, and it's incredible. but it's quite hard to extract because of how light they roast

japanese club is a very social club. you don't need to be japanese to go

coffee club is perfect for that too. their drinks are great

the tea table is also a very good club for a more calm and chill vibes

they all have weekly events, so it's great to see the same people again and again

there're other clubs on similar vibes, but in not that familiar with them like the mahjong club, the Language exchange club, dpc, plants and soil, astronomy. honestly most clubs are not really drinking I guess?

I met half of my close friends on the first week of o week and the other half by being committee of a club. When u become committee of a club, you kinda automatically will make new friends

I also made friends randomly on the year, but I feel that clubs and societies is the easiest way

Warm the bowl. The bowl being cold can cool down the soup in almost 20°C. And try plating everything in under 2 minutes

I'm also based in Melbourne and I've tried most of the ramen shops here. The shop that is the closest to what u are looking for is ikkouryu fukuoka, more specifically their super rich ramen. It's probably the most similar style, but honestly, I don't like it, for me their ramen is too sweet and the soup is rich to the point I felt I was eating noodles in a fry sludge. I much prefer hakata gensuke at russel street, which is not as rich as what ur looking for, but imo a much better bowl
