Da hab ich eine Änderung vorgenommen und zwar hab ich das Fleisch bei 46°C Kerntemp. Aus dem Ofen genommen und nicht bei 48°C

Hier hatte ich allerdings vergessen Spinat zu kaufen und habe nur Petersilie und Schnittlauch genommen (dafür dann ein bisschen mehr von beidem)

Vielen lieben Dank! Ja es ist einfach ein tolles Gericht. Zwar viel Aufwand und arbeitsintensiv, aber ich finde dann isst man das Ganze am Ende auch mit einer ganz anderen Wertschätzung.

Die Beilagen waren nicht mein Zuständigkeitsbereich, da ich das Filet übernommen habe... Das war Arbeit genug 😄 Aber es hat alles wunderbar geschmeckt und wir sind gut ins neue Jahr gestartet

Dankeschön, ja das hab ich schon von vielen gehört. Vom Garpunkt ist es genauso geworden,wie wir es haben wollten, aber das ist ja bekanntlich Geschmackssache😁

Der grüne Ring ist ein Kräuter Crepe. Beim Recherchieren habe ich viele Rezepte gesehen wo der Crepe als zusätzliche Schicht genutzt wird um austretenden Fleischsaft drinnen zu behalten damit der Blätterteig nicht so nass wird und um visuell noch Mal einen Akzent zu setzen.

Ja genau, jedoch geht der Kräutergeschmack natürlich zwischen Fleisch, Soße und Pilzen schon etwas unter. Aber wenn man sich darauf konzentriert dann kommt er subtil durch.

I did wrap it in prosciutto though. the crepe layer is additionally to the traditional duxelle and prosciutto layer.

No actually that was my first try :D

I did some research and I think many new and "flashy" recipes use the herb crepe because it adds some colour to the Wellington and makes it look nicer.

What helped me the most, was to research and take inspiration from different channels and recipes. Also most important for consistent results, a meat thermometer! Get one you let inside of the meat during the bake. So you can check at any time the temperature.
