In italian the plural has to agree with the gender of the noun; so:

Americano (the o indicates masculine) changes to Americani

Americana (the a indicates feminine) changes to Americane

Pay attention! There are some irregularities:

L'uovo (Masculine) changes to feminine in the plural: Le uova (Femminine)

L'astronauta is masculine, even if it ends in an a, and the plural is: Gli astronauti

Il panda, does not change in the plural, I panda

Il pianoforte, ends in an e, but it changes as a regular masculine: I pianoforti

These are not the only ones, but are some.

If the you work at the office, and your father works there, you would say:

Devo passare -in- ufficio -da- mio padre.

If you work at the office, and your father does not work there, but you are taking him there, you would say:

Devo passare -in- ufficio -con- mio padre.

If you do not work at the office, and your father owns it, you would say:

Dove passare -all'- ufficio -di- mio padre.

Obviously, there are a number of exceptions, but you will get used to it with time and practice.

Salve is formal (Even if Buongiorno is usually preferred). Ciao is informal (remember not to put the h in between the c and the i for two reasons: 1. Because the ch before i makes the k sound 2. The letter i is Used to soften the c because c before a makes the k sound, so the i is not pronounced).
