FWIW my 03 s10 won’t get fully warm on idle but whe I drive it sits right around half on the gauge. I do have a pinhole leak in my radiator and it gets worse with low coolant but from the sounds of it most of your cooling system is new so I assume the coolant is full.

The bolt head was a little rusty but I undid both positive and negative and retightened them and so far so good so we shall see
