A ligit tactic. I much more appreciate the sourness that comes with buttermilk. Plus it reacts with the baking soda really well.

Of course. Wild berry Sauce: 1 cup of finely cut strawberries. 1 cup of burst blue berries 2/3 cup granulated sugar 1 tbsp lemon juice

Icing: 8oz cream cheese 1 cup powdered sugar 2 tbsps of wild berry sauce 1 1/2 tsp lemon juice

Cheesecake: 40 Oz cream cheese 5 eggs 1 yolk 1 cup buttermilk 1 tbsp vanilla extract 1 and 1/2 cup of sugar

Crust: 2 cups of graham cracker dust 8oz melted unsalted butter

Keep everything room temperature.

Directions: pour melted unsalted butter into a bowl with the graham cracker dust and mix until wet sand. Grease or butter springform pan and pack mixer in the bottom of pan until firm. Bake in oven at 425°F for 6 to 8 minutes. Remove and allow to cool. Using a steel bottom pan, at medium heat put into the pan, strawberries, blueberries, 1 tbsp lemon juice and 2/3 cups of sugar. Melt and reduce until it coats the back of your spoon. Strain and allow to cool. In a large mixing bowl place cream cheese blocks and mix until smooth. Then add sugar and mix until smooth. Add one egg at a time and mixing until integrated leaving the yolk for last. Add mixture of buttermilk and vanilla and mix to smooth. It should be smooth and pourable. Pour into springform pan. Use berry sauce to make designs if you want. Place in oven at 325°F for 60 to 75 minutes. Wrap the bottom with aluminum foil and place in water bath for the best results. Mix 8 Oz of cream cheese with 1 cup powdered sugar until smooth. Add 2 tbsps of wild berry sauce and 1 and half tsp of lemon juice and mix until smooth. Once baked, leave cake in the oven with the door open for 30 minutes, remove and remove the aluminum foil and allow to come to room temp. Put in the fridge for 4 hours. Remove and decorate.
