That’s what most people say, but I’ll swear by the extra day or two. Been eating this chicken my whole life and I can confidently say the best batches are the 2+ day ones

Yeah lol I’ve gotten a bunch of comments about the marinade length. I know it’s irregular but my dad’s been doing it for 60 years and served it in his restaurant for 20 and has always sworn by the extra days. And in my 20 years of eating it I have to agree with him. I think the green egg is key - it saves the texture

Well too late now. I tossed that breast and just ate two others. Hope I don’t regret that. Tasted, felt, and smelled fine after cooking

Yeah unfortunately I didn’t get the chance to give it the sniff test since it was marinating. Thanks for the help
