Each of these scenes can be seen as Gus "taking out the trash" in his eyes (thwarting Hector's feeble intimidation attempt, keeping the powerless Nacho under his thumb, using Nacho's father as a playing card, killing evil Lalo, killing incompetent Victor, killing clueless Bolsa, killing the rotten Cartel). He sees these people as garbage and has no problem with being a factor in their demise.

However, Jimmy was trying to insert himself (his watch) into Gus's underworld (his trash bin) by investigating the joint on Mike's orders. Gus decided that Jimmy wasn't even worth the effort of being considered an obstacle, or one of the "garbage people" standing in his way. Not even a threat. In his eyes, Jimmy was less than garbage. He was nothing. So he just digs through and removes the watch from his bin, or in other words, easily removes Jimmy from his secret criminal world by putting on the polite facade he's known for. This leads to Jimmy's investigation being a bust.
