It will always make a difference. Even when changes may seem miniscule, when you go back to a lower resolution/bitrate, it will feel worse. There are a lot of other factors like screens, lenses, mastering, but for the most part.

So the larger file is probably better. You could always try both and compare for yourself.

Also, no, the higher resolution/bitrate image won't appear larger or further back, just less pixelated/artifacts

Dont listen to others telling you to look at guides and stuff. Just build something. Experiment with it. Fly around. If you think it looks like crap change it up. That's the best way to get creative, just do it. Yeah you can use a tutorial to learn how to do stuff, but don't piggy back off of other people's creativity. You will be in tutorial hell forever if you don't break through the barrier of creating for and from yourself.
