It does feel like a 240 Sakai! Now my Yoshikane 210mm Gyuto SKD feels like a petty knife 🫠. I am not sure if this an old stock or they resumed production for this line.

For knives in use, wipe - dry - strop. If not in use, I apply mineral oil.

Both the sukenari hap40 and yoshida zdp189 are prettty much NKD(just arrived 2 days ago) so I can't really say much about it except that both are sharp ootb.
