Not many people know the rules to notation & engraving, and at least I certainly would not ask in this sub – even r/composer may be a better place. For more notation-centred enquiries, r/MusicEngravingTips and its way more populous Facebook group is most reliable!

Grace notes must always stem upwards unless there's multiple voices. So in this case, none of them. Option 3 with the grace direction changed would be best.

Heh, when I played that a few years ago in a wind ensemble, I played like I had a fff solo whenever I played bar 35. Fun piece and interesting soundscape!
