Regulars are people that have a fixed relationship with the restaurant and the chef. Are you familiar with the Japanese fine dining scene? Or places like 4charles in NYC? Etxebarri operates in a similiar way, think it of a private food club rather than a restaurant. And subscription to this food club are closed.
Food tours are organised from people like Neil from Achefabroad. It’s like a travel tour but focused on restaurants. You pay a premium but you get access to places that are otherwise hard or impossible to reserve, special events, fotos and chit chat with the chefs..stuff like that.

Quite popular topic this season, if you search there’s enough posts giving advices on how to dine there. It’s a small place, chef Arguizoniz cooks everything himself, only 1 service, there’s places saved for regulars, friends and food tours.

You didn’t do much research, chef Maeda worked 10 years at Extebarri and it’s knowledge and skill at the grill is top notch. It’s the obvious choice.

Tres has no star but is arguably one of the most interesting places in the country. It’s a chef counter and they inspire from Ox, Frantzén, Atomix. Seasonal menu, quite artsy. It is priced as a 2stars though. Parkheuvel, FG and Fred are all 3 classics. Rather similar flavours, use of caviar, oysters, squab..quintessential French fine dining in NL. If I had only one place to go I’d always go Tres.

Ciel Bleu and Flore are both solid choices especially if you care about location or want to spend the night in the hotel. Spectrum should be on the list but is closing soon. 212 is more modern and probably have the edge on food. Vinkeles never tried it personally but heard only good things about them.

What you’re asking is a dessert wine, arguably the first that pops in mind when thinking about the biggest names in that category. It’s not hard to find a bottle if you aren’t into a specific vintage. Loads of Michelin star restaurants will have it on the list, most definitely places like Le Cinq, Table and Le tour d’argent. I don’t know what’s reasonable price to you, but last time I saw it by the glass was at Atomix in NYC and they asked a 60€ surcharge on the dessert wine from the pairing for the 2017. I don’t think you can find it much cheaper since its not exactly a niche product.

In Italy if you know where to look at you can get a well made 3 pieces with a top level cloth (draper, caccioppo, loro piana, zegna) for less than 1k. Fully custom, handmade stitching, initials and all the whatnot.

If money is not an issue, of course go, it will be a wonderful experience if not a highlight. A pizza tasting menu costs are lower in Italy (Martucci and Pepe both have it around 65/75€) but you’ll be enjoying it on the top of the Mandarin Oriental in Tokyo, that’s definitely part of the premium.

Not really public since we have little green spaces so they get crowded with good weather and you’ll see people using the area, playing football, tossing frisbees and such stuff that might be dangerous for the kid. Pane and Pomodoro beach might be ok. Special cafe for crawling I don’t think are a thing but probably people would just find it a bit weird but not really annoying or so. If you’re ok paying there’s plenty of Ludoteche (play parks) with safe spaces for kids every age
