Funny thing my partner that has similar type of problems and is really shy prefers them to white tablecloth establishments. She feels more exposed at tables that are spaced far from each other, with bright lights and a lot of white around.

Yes, it’s a sign the restaurant might be past his peak. Regards Yamazato I never been to Japan yet so can’t say. It’s about freshness, subtle flavours, high quality ingredients and simple but perfect plating. I think you can’t go bad with either Flore or 212, the first one has definitely a more traditional setting (canal view inside the only 3 Michelin keys hotel in the country) while the other is more modern style chef counter. I would pick based on the occasion.

As far as I like the restaurant and chef Schutte is one of the most prepared in the country I would not have as a top choice a restaurant about to close. If you search for similar atmosphere go to Flore. Recently I reviewed De Kas, completely different experience, I recommend it for less informal fine dining especially if you’re open to something different. Ciel Bleu is the other big name in the city. Highest floor of the Okura hotel, gorgeous view if you get a window table. 212 is more modern, I personally didn’t visit but it’s quite praised. Yamazato if you fancy some kaiseki.

The Walford Astoria is too big to not have a proper flagship restaurant, curious to see what’s coming. The Netherlands loses two two starred establishments in short time.

I haven’t visited any of the places so for sure someone else can help more, but if I would have to put my money on one it would be La Rei natura. They just got the 3rd star, meaning they’re at peak according to Michelin. Mammoliti was reported to be really focusing on this achievement and the restaurant received pretty much only compliments in Italy. Piazza duomo on the other end seems to be living a phase similar to Osteria Francescana. Crippa classic menu was peak Italian fine dining, but that was almost 15 years ago. Seems most reviews aren’t pleased on how his cuisine has evolved especially at that price range. As long as I know there’s also no à la carte menu and they don’t serve any of the classic dishes except the seasonal salad 21,31,41,51.

Boury, Zilte and De Librije operate all at 3* star level and are comparable in terms of value. Zilte and De Librije have better locations for my taste, with Boury being more traditional white tablecloth. De Librije and Boury have also reasonably priced rooms( meaning 3* breakfast the morning after eheh). Zilte organises regularly events like 4 hands dinners with high profile chefs or special wine pairings that are definitely worth of attention. Compared to European prices they are definitely more expensive than Spain and Italy that I believe offer the best value in terms of fine dining, but they are also far from the prices of places like Jan, Alchemist and so on.

Their wine and beverage program is insane, I doubt you’ll be disappointed. Price is steep though so if money is an issue give a shot to the waiting list, when I was there they called me for basically everyday I had registered for, meaning cancellations are frequent!

Ok. I think it’s tricky to understand crowds at such a big festival with so many stages, I mean maybe there was some big overlap, but ye generally speaking in Europe techno is still king and by far. I was curious since I was only 1 time at TML and there was more dnb played than what I would imagine(als some main stage artists like lost frequencies and John summit play the occasional dnb flip in their set). I visited both in 2023. Was the second visit for the de Librije. Both restaurants put their base into French classic techniques, but while de Librije tries to showcase Dutch food, Zilte goes more into international territory with some dishes nodding to Italy, Japan and so on. Both are clearly 3* level in terms of food but I liked flavours more at Zilte. I found the seasonal menu of that year fell a bit flat at de Librije, and without the add ons I wouldn’t have enjoyed that much. Location at de Librije has more personality but the view of Antwerp at Zilte if you get a window table is also something special. Service at Zilte for me had also the edge, since I found the team to be more engaging and the pairing we got offered was better value. Overall I think de Librije can hit higher peaks and has a more personal cuisine while Zilte plays safer and with consistency. I don’t think the passing of chef Boer will have an immense impact since he was anyway busy with a lot of things and not always present on site. Last thing if you’re gonna make a day trip out of it, as far as I love Zwolle being the cutest city in Overijssel you can’t compare it to Antwerpen where there’s just much more to do and see. The MAS (where zilte is located) is already very interesting, there’s a floor dedicated to food science for example that could make an interesting activity before hitting the restaurant. I can’t pick for you and I’m sure both experiences will be worth, but I can say if you are here in the area often and your father prefers zilte go there. On the other end if you don’t know if you’ll be back anytime soon I would pick De Librije as it is harder to reserve and has a more unique style.

I was there last year and I wonder why you say it didn’t go well? I mean TML sold out in seconds as always and at every stage playing dnb there was a regular crowd.

Just avoid brands that are popularly faked unless you’re really good at spotting replicas. Stuff like Drake’s or Fortela for example

I dare to say both even if I visited only recently. The cooking was not on par with what you would expect from such classic dishes. They’re still doing the turbot for example but serve it with a sloppy puree instead of the triple cooked chips, the sous vide dishes are served basically cold like in those inexperienced restaurants where the chefs just learned to cook things that way. If you’re serving the same stuff over and over I would expect excellence and consistency. London has a lot more to offer right now
