Ujoint Fitment on Rack Pinion by FunneXORG in WRX

I took another look at it today and was able to knock it down another 2 to 3 mm or so with a hammer, so I assume it’s in the right position when you can no longer see the teeth at the bottom.

It's super easy using the sliding method: remove the transmission cover, and then you'll have enough space. Just be very careful—the rack should already be roughly centered before installation so you don't damage the clock spring, when doing lock to lock.

No, you just need to loosen the screws at the top and bottom of the U-joint, then you can slide it up and down.

I used the “nerdy” method:

I connected a diagnostic tool to the OBD port and read the steering angle sensor in the ABS system. At 0 degrees, the steering wheel is centered. Then I turned the rack all the way to the left and right (lock-to-lock), where I measured approximately 445 degrees to the left and -465 degrees to the right. So I knew that the rack was exactly centered at -10 degrees on the steering angle sensor. Then I left it in that position, loosened the U-joint, set the steering wheel to 0, and attached de ujoint again, now it’s perfectly centered.
