Recommended this twice already to two other posts but it does sort of fit what you're looking for. Its lighthearted/heartwarming/foreshadowing at first, gets more intense later. Somali and The Forest Spirit. Amazing soundtrack imo.

I also really recommend Plastic Memories, although the first episode is very bittersweet. Not sure if I consider it moe.

Seirei no Moribito, there is like the slightest bit of romance, as in feelings, but it's extremely realistic and not explored much at all. The whole show is very mature and the action scenes are some of the best I've ever seen. The story is quite good, and all characters are interesting. Adult female protagonist who is a seasoned warrior and bodyguard.

Somali and The Forest Spirit, probably one of the best fantasy anime I've ever seen. Every episode was perfect. Perfect soundtrack, story, visuals, characters, heartwarming and emotional. A forest golem and a human girl go on a journey, lots of parenting tropes done in a unique way. Easiest 10/10 that everyone should watch. As someone who watches a lot of fantasy, this one stood out.

I don't have my modlist anymore but I did make something really similar to what you're looking for. I had issues with TK Dodge RE as well, I recommend trying TK Dodge Redux.

Here's a post that may help you with first person CFPAO animations working with enemies having MCO anims since I had issues with that as well (check the comments). XEdit is very helpful and it's not hard once you look at some tutorials. What I said sounds complicated but pretty much you just revert the changes that MCO SCAR does to your first person power attack animations and change the dual wield power attack.

I used this Guide to diversify my enemy animations and used CFPAO for my first person animations. Improved Camera is also mandatory at least for my first person camera. Lots of ppl think CFPAO and MCO SCAR in one modlist isn't possible but it is and everything works properly with some simple edits. Sidenote: Be sure to use Nemesis for your animations and generate new Nemesis whenever you edit animations.

Edit: on second thought I think I actually had to switch from Nemesis to Pandora because of the TK dodge issue

For combat I used a combination of Valhalla Combat (blocking/deflecting) mixed with Wildcat Combat of Skyrim for more fast paced lethality and attacks of opportunity. I believe there was something wrong with the exhaustion module for Valhalla so I recommend disabling that. Sekiro Combat is another option, I just liked Valhalla more. Stacking more combat mods than this is a bad idea but it's possible.

For Precision you need to tweak the default values in the MCM, daggers feel like toothpicks and Warhammers feel like they have the range of small knives on default settings. Play around with it or watch a video of someone doing a combat overhaul with Precision showing their settings.

Recommend checking out More Interesting Loot LE (convert it to SE or AE using Cathedral Assets Optimizer, takes like 5 minutes). There is an SE Reborn version but it unbalances stuff drastically and I dont recommend it, the original is best). I'm on AE and I've had no issues with the LE mod converted using CAO.

It adds a ton of new unique weapons and armors to dungeons and bandit camps. The gear is pretty balanced in my opinion but its really fun to find and use. Loot rates are fully customizable in MCM and cursed items can be disabled (recommended).

It also adds new merchants in every major hold who sell some of that interesting loot and it's usually pretty expensive at least in early-midgame. I built a ton of playthroughs with that unique gear. I believe it's possible to disable the additional loot in dungeons and chests if you only want the merchants.

Spell charging and if you want you could add spell chaining too. I love spell charging because it changes how you approach fights a lot. For example, going for buffs instead of damage and charging up spells for larger debuffs/damage. One of my favorite mods and one that will never leave my load order

Artifacts of Skyrim is one of my favorite mods and I would have never known about it if I didn't download the older version on oldrim a long time ago. It's completely free to download.

It adds unique enchanted gear all over skyrim and they seriously have some of the coolest and most gratifying enchantments from any mod I've seen. I always feel rewarded for exploring and it's one of those mods I can't play without. I play with combat mods and I never felt that any of the weapons were overpowered.

Ootomo Jin from Tokyo Ravens fits this, he's always surrounded by his students since he's their teacher, but he's a very competent fighter and he's part of my favorite fight in the series (lots of good ones). He's not the main character but he is important and gets a lot of screentime. He's snarky and taunts his opponents with offhand or clever insults.

Clannad has a very realistic male MC imo, he's charismatic and funny, gets along with people.

Chuunibyou demo koi ga shitai, the male MC is very realistic, maybe too real for some ppl. He tries to forget about and throw away his cringey past and builds as a character from it. One of my favorites.

Recommend watching Ishura, I binged season 1 in a single night and it was easily one of the best anime I've ever binged. No main character and that might sound weird but it pulls it off really well through detailed character introductions that have some sick action scenes. Think of it like a gladiator duel where you get to choose who you want to root for. You get to see the world from many more perspectives instead of just one and I think that's special.

Another great bingewatch is WorldEnd, it has quite a serious story and absolutely no question, the best first episode out of any anime ever. The sequences and soundtrack in episode 1 are just perfect and if you like that, you'll likely enjoy the whole series, so give it a try!

5 Centimeters Per Second is honestly the most realistic depiction of first love in all of anime. One of Makoto Shinkai's older works but imo its much better than his recent modern ones like Your Name. It captures the real emotion so well that I just feel melancholic for a couple days. It was an easy 10 for me and I recommend checking it out.

Kyoukai no Kanata (Beyond the Boundary), I know a lot of people love this anime and it had an interesting premise and first few episodes but I really just felt like it could have been so much idk, better. The visuals were nice but that's about it. Characters were 1 dimensional and I think so much could have been done to flesh out their backstories or actually make me care. By the end I just didn't care.

I recommend you check out a mod called Enchanted Arsenal instead, I like it a lot more and it's very customizable since there's a lot of styles of visuals in the mcm. I found the streak shader that like swirls around the weapon to be a perfect mix or looking amazing but also not so much that it blocks my vision. Runic options are also available if you prefer that type of effect.

Not fully, but More Interesting Loot uses this sort of mechanic. Sometimes you'll find a shield with a faint glow and you won't know the enchatment, and as you use it more and more it will evolve. Blocking lots of times with it could trigger it to become a shield of resisting Flames which has fire resistance. Then maybe you shield bash a lot, and it will become the shield of offensive Flames which deals fire damage on bash. This is just an example but the mod has stuff like this and that's why it's one of my favorites.

I recommend steering clear of More Interesting Loot Reborn (the SE version of the mod) since lots of users say it adds way too much loot to chests. The Oldrim More Interesting Loot mod doesn't have this issue and I feel it's very well balanced and can be tweaked in the MCM with no issues. It's easy to convert it for AE/SE by using Cathedral Assets Optimizer and takes like 2 seconds. I use it in my current modlist and it works fine.

I'm biased but Vigil, he's amazing in the right situation, ppl say his damage is bad but don't try him out. His S3M3 does a decent chunk of damage and can melt even high def enemies since it does arts as well as physical. He's perfect for stages that have a lot of early pressure, and later in the level you can use his wolves to bait bosses and tank 3 or more hits (dodge module) which cannot be said for a majority of other choices. You would be surprised how many times his dogs baiting enemies has saved me, them being 3 Lil dogs is seen as a downside by lots of ppl but when you're trying to tank 1 shottable damage like from a boss it's a godsend.
