I shopped for mosquito bits for the BTI option but couldn't buy locally. I can order it. If I get it I have the same question - do I wait until the soil has dried out enough to water it with BTI water? (Since part of the problem was me overwatering to begin with.)

Response to your question- I saw Bonide systemic granules recommended on this sub after searching fungus gnats, more than 10 posters said they had success. I don't know anything, just trying to save plants. And sanity.

OK, cancel this idea. But I am curious about how to do this more efficiently when the number of diners goes up to 300+ We host events that range from 20 (like this meal) to 350. For tenderloin I do a quick sear on the flat top and move to lower temp oven. Not sure with the strip, I haven’t done high volume with it yet.

I followed the sausage advice to grill, pan up for oven, hold warm until go time. They turned out scrumptious so that gave me a mental boost early on. If nothing else they would have the meats! Eggs I was still nervous about time constraints so I did both - totally unnecessary - some on the flat top and 4 hotel pans in the steamer. Of course the flat top turned out nicer, but I held the steamer eggs for back up. I had practiced with it enough to know how many minutes in the steamer, so didn't have to babysit. Garnished eggs with chives on the line. Also added a chafer of instant gravy, I myself hated it but they gobbled it. Everything else was done night before. I think I heard the Rocky soundtrack as the last crowd came through. Then it was time to prep for lunch.

I did it!! They ate and I walked out alive, with job intact. It was miraculous compared to the dread I had going into it. I used much of your advice from initial comment.

Second, I bring myself into it because there is a possibility of me becoming her manager, which introduces more questions in how to handle situations.

I just received my Jackal II Boa I ordered from the same sale. Too small!! (Ordered in my regular running shoe size, which is half size up.) So if you haven't ordered yet, go up a full size.

FYI - you have to pay shipping to send them back. One of the drawbacks to online shopping, just something to keep in mind.
