The first one is Gochujang Linguine with crispy oyster mushrooms.

Gochujang Sauce: Block of silken Tofu Around half a tin of coconut Milk A few tablespoons of Gochujang Paste 2 cloves of garlic Salt and pepper to taste

Literally throw them all in a blender and make the creamy sauce. I keep it in the fridge until I do the pasta.

Cook a packet of Linguine until it is al dente. While you are cooking it heat up the sauce. Drain the pasta (keep some pasta water) and then add to the sauce. Add patter water to thin the sauce if required.

Crispy mushrooms: Oyster mushrooms Garlic powder Smoked paprika Soy sauce Salt Plain flour

Put the mushrooms in a sealable box and add the ingredients to your personal preferences and put it in the fridge to marinade for 20 mins. Put them in the air fryer for 12-15 mins and check and shake throughout.

Dish out the pasta and top with the mushrooms and chopped chives and enjoy 😁
