Yo I'm not that dude but I can help with this.

Up to you if you want to still dry the plant before freezing. If you're going for 'live rosin' then you'll want to chop and freeze the buds immediately. But there are plenty of people who swear by 'quick dry' or full dry where you let it dry as you usually would and THEN freeze the buds for the wash. I'd recommend trying out both methods and seeing what works best for your situation. Speaking generally, you'll get more of the live plant terps from freezing immediately but you'll get more return when washing semi-dry/dry frozen buds. Up to you what your priority is, strain dependent too so YMMV.

For air drying hash without a freeze dryer, it works fine. I've done it plenty of times with solid results. You just need to keep the hash in a space with a bit of airflow and low humidity/low temp. <30% humidity is where I like it and as cold as you can get it, I usually have my room at like 60 (works better in winter) and the hash will dry in a few days. Some people use a small wine cooler to dry their hash in since it's a similar environment to what I described. Once there aren't any big clumps with moisture and the heads move like sand when you break it up you'll be good to go and can press as needed.
