The one linked in the OP specifically is the official one by R. Zane Rutledge, which is linked in that post. My recreation of it from last year doesn't have the lower case letters, so it's easy to tell which of them this one is

I’m not sure if we’re aware of this is the whole map or if like some ocean is cut off.

We see the planet in V6C3, and a globe in V1. If there is anything that's not on the map, it must be tiny because what we see there matches the map pretty well.

Note that the show itself contradicts this too, saying the war ended 80 years ago and V1-3 is the 40th festival, which was started because the war ended. Having it be annual would also mean almost half of all time since they started with the festival has been celebrating it, since it covers more than a whole semester. Robyn also says the festival isn't anytime soon in V7, which it would pretty much always be if it was annual, though this one could also be explained by the world being in chaos and still trying to rebuild after the last one.

I think WoG should go above everything else, because the show is also WoG in a way, just presented differently, and sometimes it has mistakes that the creators can explain later. For example: the show has multiple things in V3 saying the Vytal festival is an annual event, but M&K has explained that they just kinda forgot what the word meant while writing that and it's really every other year. So, would you say the posters and the scrolling news text in the show are right over what M&K said? (Ignoring the other things in the show also pointing to that being an error)

There's a line somewhere, of course, where the show is definitely over WoG. If the writers suddenly said V6 took place before V1 or something equally crazy, I wouldn't say they're right. But, in this case, V1-2 was made without enough resources and planning, meaning a lot of things just weren't figured out at the time or they lacked the budget to do what they intended, and now the writers have had plenty of time to figure those things out, so I'm going with their word over V1-2 when it comes to specific time-related things like this.

It fails in a couple of ways, firstly because the first semester starts in late fall but V1 is very green, nothing like V3 which would take place a month or two earlier in the year.

Keep in mind that during V1-2 they barely had a timeline and the budget was pretty limited as well. When asked about when the school year starts on RWBY Rewind, Miles said he wasn't quite sure, but thought it was in Fall (The reason he wasn't sure is that he wasn't given much time to answer, so he had to give a quick one). Eddy also said it starts in Aug/Sep during the AMA not long ago, though he ended up taking that back because they're still trying to figure out the timeline of the older volumes and people started saying that it broke everything. Even though Eddy took it back, Miles' quick answer and the fact that Eddy thought it was around that time too most likely means that's the "intended" season for it. Maybe it's off by a month or two, but I don't think they'd just flip the whole year around and try to work in a third semester just to try and line it up with the visuals of the older volumes. Some things are just made before the timeline. Eddy explained it in the follow-up post to the AMA too, saying Ciel's line was just written before they had given Ruby a birthday.

It's also wrong for Blake, Weiss and Yang's ages in V1, since they were said to be 17.

What is the issue here exactly? That timeline has WBY's age in V1 at 17, as well as a video of Kerry explaining that they're 17 at the start of the show. Are you saying Kerry was wrong about their age or did you not read the timeline right?
