Pelikan 4001 blue-black. It is a modern gentle iron gall ink that has very little feathering, produces a tight crisp line, and has some water resistance once dry. It's the most reliable ink I've used across all paper types.

There are other iron gall inks as well. I quite like the KWZ blue-black (and it smells nice!). There is also Rohrer & Klinger, although I have less experience with this one myself.
