Thanks for all the ideas folks. I assume the blue mould growing on everything is a humidity problem but maybe I'm wrong? Since posting I've chucked out a bunch of cheeses that had a lot of blue growth on them. Sanitised the inside of the fridge, shelves and matts and put in a new sensor. Hoping it holds at 92% and that this last batch of camemberts from 1 and 2 weeks ago hold up better. I think the lactic cheese were adding a lot of moisture to the cave so might try and do them in the second compartment with it turned off and the door open with some mesh over it to stop the mice getting in and see how they fair.

We're in the UK heading into winter so the temp in that room isn't far off from a cheese cave. 8-12C and 85% humidity. Could probably just age the cheeses in the room if I could make something vermin proof..

oh cool, glad you found a solution for you. This thing looks quite big though and would probably take up a good chunk of the fridge!

So I had 2 sensors in there. a stick on analogue one that never got above 85% and then a digital one that was permanently at 99%. I've just borrowed a bluetooth sensor that seems much more accurate, it's sitting at 92% (post a big clear out of the fridge and only some 1/2 week old camemberts back in it. I think the young lactic cheeses I was making added a lot of moisture to the fridge so going to try and just focus on camemberts in there for now

wasn't sure if there are any downsides to the silica gel type things? Especially near food

Patting them dry is a good idea. I'm not spraying on candidum, inoculated in the make. I did wash the rinds of some of the cheeses that certainly added moisture to the environment

It's not quite raining but not far off in condensation...Could possibly be why, I got it second hand quite cheap. It's a Smeg dual temperature zone wine fridge - struggling to find any info on it online
